INGREDIENTS:
2 medium Sweet potatoes, peeled & cubed
1/2 head Cauliflower, pulled apart into pieces
1 TBSP Olive oil
1 tsp Cumin
1 tsp Garlic powder
1/2 tsp Paprika
Salt & pepper to preference
1 large egg
1/2 cup Flax flour (or flour of choice)
1/2 TBSP Chili powder
1 tsp dried Cilantro
Juice from 1 Lime
+/-1 cup Old fashioned oats (add last and adjust depending on the consistency of your mixture)
INSTRUCTIONS:
Step 1: Preheat oven to 425°F.
Step 2: Toss sweet potato and cauliflower in olive oil, cumin, garlic powder, paprika, salt and pepper. Spread out on baking sheet to 1 layer. Bake for 15 minutes on top rack, 15 minutes on bottom rack.
Step 3: Add the rest of the ingredients (except the oats) to a mixing bowl and mix well.
Step 4: Once the vegetables are done, blend until your desired consistency. Add to mixing bowl. Fold together. Add oats.
Step 5: Form into patties. Place on baking sheet and freeze for 10-15 minutes.
Step 6: Bake for 30 minutes, flipping half way through.
Step 7: Serve immediately or let cool and freeze for later!
