Vegetarian Chili Mac


1 Yellow onion, chopped

2 TBSP Olive oil

3 Garlic cloves, minced

1 large Sweet potato, cubed

1 can Diced tomatoes and green chiles

1 can Fire roasted diced tomatoes

2 cans Black beans, drained and rinsed

2 TBSP Chili powder

1 TBSP Cumin

2 tsp Paprika

2 tsp Oregano

Salt to taste

8oz Coconut milk

8oz Water

1 cup Elbow noodles, dry

Step 1: Saute onions in 1 TBSP Olive oil until translucent. Add garlic. Cook until fragrant. Add the rest of the olive oil and the sweet potatoes. Cook for 3 minutes.

Step 2: Add tomatoes, coconut milk, water, spices, and noodles. Simmer for 10 minutes.

Step 3: Add black beans, stir, and cook for additional 10 minutes.

Step 4: Add your favorite toppings and enjoy!
