Cilantro Lime Fish Burritos

I served this on a spinach and herb wrap, sautèed onions and peppers*, avocado, cheese, and my chipotle sauce. This can be served by itself with a side of fries or rice or quinoa, whatever you choose I promise this will not disappoint. YUM!

INGREDIENTS:

4 small White fish fillets

1 Lime, juice and zest

2 TBSP Olive oil 

2 tsp Red pepper flakes 

1 tsp Cumin

4-6 sprigs Cilantro, chopped

INSTRUCTIONS:

Step 1: Combine ingredients, toss fish in them, pour into baking dish.

Step 2: Bake at 375°F for 15 minutes or until fish is cooked thoroughly. Serve as you wish!

*Step 3: For sautèed onions and peppers, heat 1 TBSP Olive oil in pan over medium heat. Add 1 yellow onion, sliced. Season with salt and pepper. I added about 1 tsp of sugar. Once mostly cooked and starting to brown, toss in 5 small sweet peppers (or about 1 bell pepper). Continue to stir until cooked. Add 1 TBSP Italian seasoning and 1 TBSP taco seasoning. Stir to combine. Serve up!
