Sweet Potato Fries with Chipotle Dipping Sauce

INGREDIENTS for 1 serving:

1 large Sweet potato, cut into fries

2 tsp Cornstarch 

1/2 tsp Pepper

1/2 tsp Paprika 

1/2 tsp Garlic powder

Little Cayenne pepper

1 TBSP Olive oil

Salt to taste

For sauce:

1/4 cup Mayo

1/4 cup Sour cream

2 TBSP Olive oil

1/2 tsp Paprika 

2 TBSP Adobe sauce 

1-2 Chipotle peppers

Juice from 1/2 Lime

2 TBSP Sweetener of choice (agave nectar, syrup, honey, etc.)
INSTRUCTIONS:

Step 1: Preheat oven to 400°F. Rinse sweet potato fries in cold water, pat dry. 

Step 2: Toss in cornstarch.

Step 3: Place on baking sheet without fries touching.

Step 4: Drizzle with olive oil and sprinkle seasoning. 

Step 5: Bake for 30 minutes. Check. Bake for another 5-15 minutes depending on thickness of fries. 

Step 6: Season with salt!

Step 7: Put all ingredients for sauce in blender and pulse until smooth.
