Not for the faint of taste!! This is HOT!
2 TBSP Chile seasoning
2 TBSP Soy sauce
1 TBSP Honey
1 tsp Rice vinegar
1 TBSP Sesame oil
2 servings Ramen, drain half the water
1 bunch Bok choy, ends removed
1 large Carrot, sliced into thin ribbons
1 cup Baby button mushrooms, sliced
1/2 cup Scallions, diced
2 eggs, poached
1/2 block Tempeh, sautèed in soy sauce and rice vinegar until browned
Step 1: Toss bok choy, mushrooms, and carrots in olive oil then bake at 350°F for 15 minutes.
Step 2: Stir in dressing and vegetables with noodles.
Step 3: Serve in bowls and top with egg, scallions, and tempeh (or protein of choice)!
