Stuffed sweet potato fajitas

Healthy, delicious, and filling!
Servings: 2

INGREDIENTS:

2 Sweet potatoes, medium-large

1/2 15oz can Black beans, drained

2 TBSP Refried beans

1/2 cup Mexican blend cheese, shredded

1/2 Yellow onion, sliced

1/2 Orange bell pepper, sliced

1/2 Green bell pepper, sliced

1/4 cup Vegetable broth

1 tsp Taco seasoning

Additional sprinkling of cayenne pepper, garlic powder, and red pepper flakes

2 + 2 tsp Olive oil

Optional:

1/2 Tomato, chopped

1/2 Avocado, sliced
INSTRUCTIONS:

Step 1: Wash sweet potatoes, coat lightly in 1 tsp Olive oil each, and wrap in foil. Bake at 400°F for 45 minutes. 

Step 2: Add 2 tsp Olive oil to pan on medium high heat. Add onions and peppers. Cook until vegetables are tender. 

Step 3: Add vegetable broth, taco seasoning, additional seasonings if desired, and continue to cook until all liquid is gone.

Step 4: Cut sweet potatoes in half. Smear refried beans along inside of cut, add cheese and black beans. Top with onions and peppers.

Step 5: Return to oven, uncovered, for 10 minutes. 

Step 6: Remove, add toppings, and enjoy!
