When you throw together dinner last minute with whatever you have left in the fridge and it turns out bomb….😍😍😍
1 box Bowtie pasta
1/2 medium Butternut squash, cubed
1/2 large Eggplant, cubed
1/4 Yellow onion, diced
3 Garlic cloves, minced
2 Smoked apple and sage sausage (vegetarian)
2 Tomatoes, diced
Salt and pepper to taste
1 TBSP Olive oil
1/2 cup Vegetable broth
8 oz Mozzarella cheese, shredded
2 oz Parmesan cheese, shredded
Step 1: Cook pasta according to box directions.
Step 2: Preheat oven to 425°F.
Step 3: While pasta cooks, Sautè butternut squash in olive oil for 5 minutes then add eggplant, onion, garlic, sausage, and broth. Sautè for another 5 minutes. Add tomatoes for final few minutes.
Step 4: Toss pasta with a little oil. Layer in baking pan pasta, veggies, then cheese.
Step 5: Bake for 12-15 minutes. Enjoy!
