Comfort Bowl

It’s been a really hard few days for us and we were craving some comfort food.

Creamy garlic mashed potatoes:

1 lb/5 medium-large red potatoes, mostly peeled and quarter

1/4 cup Coconut oil spread

1/2 cup Coconut milk

1/2 tsp Onion powder

1 tsp Garlic powder

Salt and pepper to taste

Marinade for tempeh/protein of choice:

3 TBSP Water

1 TBSP Adobe sauce

1 tsp Olive oil

1/2 tsp Cumin

Salt and pepper to taste

Adobe pepper corn:

1 1/2 cup Frozen corn

1 TBSP Water

1 Adobe pepper
Optional: cheddar cheese, diced tomatoes

Step 1: Put potatoes in a pot of water and bring to a boil. Reduce to medium-low heat until you can stick a fork through the potatoes with ease. Drain. 

Step 2: Add coconut oil spread and coconut milk and mash (or blend, I used my Ninja) until desired consistency.

Step 3: Return to pot, add onion and garlic powder, salt, and pepper. Stir to combine.

Step 4: Place protein in oven pan, cook at 400°F for 15 minutes.

Step 5: Add corn, water, and Adobe pepper to skillet on high heat until boils. Reduce to medium-high heat, stirring occasionally until corn is hot and all is mixed.

Step 6: Serve in bowl: mashed potatoes, corn, protein. Top with cheddar cheese and diced tomatoes. Enjoy the YUM and feel better.
