1 bell pepper
2 TBSP onion, diced
1 Garlic clove, minced
1/4 Tomato, diced
1 tsp Taco seasoning
1 tsp Olive oil
1/2 can of Black beans, drained and rinsed
1/4 cup Mexican cheese mix
1/2 Avocado, sliced
Step 1: Preheat oven to 375°F. Cut top off of bell pepper and dice up what you can. Bake bell pepper for 25 minutes.
Step 2: Heat pan at medium high heat. Add bell pepper pieces, onion, garlic, tomato, taco seasoning and oil. Cook until onion is translucent.
Step 3: Mix in black beans.
Step 4: Stuff pepper with mixture and top with cheese. Bake for 30 minutes.
Step 5: Serve with your favorite toppings and maybe a side of rice!
