Shrimp Scampi with Zoodles

Shrimp scampi with zoodles (zucchini noodles). I think this is the most successful meal using the spiralizer yet! 
INGREDIENTS:

1lb Shrimp*

Olive oil

4 Garlic cloves, minced 

1/4 tsp Red pepper flakes 

2 TBSP Butter

Juice of 1 lemon

1/4 cup  Vegetable or shrimp broth

3-4 Zucchinis, spiralized**

Salt and Pepper to taste 

Lemon zest of 1/2 a lemon

Parmesan cheese, as much as your heart desires
INSTRUCTIONS:

Step 1: Sauté garlic and red pepper flakes in oil until fragrant. Add shrimp and butter. Cook about 2 minutes. Set aside.

Step 2: Add broth and lemon juice to pan. Cook for about 2 minutes. Add zoodles, cook until tender or about 2 minutes. Salt and pepper to taste. 

Step 3: Add shrimp back into pan and toss together. Add lemon zest and parmesan cheese. Enjoy!!
*The shrimp I bought were already deveined and cooked. If yours and raw, devein before adding to pan and cook until shrimp are pink.

**I used 2 zucchinis and about 2 cups of cooked whole wheat thin spaghetti.
