Butternut squash noodles and ricotta skillet

INGREDIENTS:

2 TBSP Pine nuts

1 small Butternut squash, spiralized 

Olive oil

3 Garlic cloves, minced

A sprinkling of Red pepper flakes

1/4 cup Water

1 medium Tomato, diced

2 cups Spinach

1/2 juice of Lemon

2 cups Ricotta cheese

Parmesan cheese

Salt and Pepper to taste 
INSTRUCTIONS:

Step 1: Spiralize butternut squash

Step 2: In a pan over medium heat, toast pine nuts until lightly browned. Set aside.

Step 3: Add olive oil to pan with garlic and red pepper flakes. Cook until fragrant.

Step 4: Add butternut squash, toss in garlic and oil, add water and cover. Let cook until noodles are to desired tenderness.

Step 5: Toss in tomato, spinach, lemon juice, salt, and pepper. Cook until spinach wilts. 

Step 6: Serve, adding dollops of ricotta cheese, pine nuts, and parmesan cheese as toppings. Enjoy!
