Gnocchi and Sausage skillet

INGREDIENTS:

17.5oz Potato gnocchi

Olive oil

2 Tofu kabasa sausages, cut into slices

2 Garlic cloves, minced 

1.5 Beefsteak tomatoes, diced

1 cup Spinach

1/4 tsp Oregano, dried 

1/4 tsp Basil, dried

1/4 tsp Parsley, dried

1/3 can Coconut milk, shaken

1 cup Mozzarella cheese, shredded

Salt and Pepper to taste 
INSTRUCTIONS:

Step 1: Preheat oven to 350°.

Step 2: Heat olive oil in skillet over medium heat. Add gnocchi and cook until beginning to brown, stirring occasionally. 

Step 3: Add sausage, garlic, and tomatoes. Cook until spinach whilts.

Step 4: Add oregano, basil, parsley, salt, and pepper. Stir. Add coconut milk, stir, and bring to a simmer. Let simmer for 5 minutes. Top with cheese.

Step 5: Bake for about 5 minutes. Enjoy!
