Mexi-Roasted corn pasta salad


1 box Bowties

2 15oz cans of corn, drained

1/4 cup Red onion, diced

1 Avocado, diced

1 Jalapeño, diced with seeds removed

1/2 cup Mayo

1 TBSP Adobe chili sauce

1/8 tsp Cumin

1/2 tsp Paprika

1/2 tsp Chili powder

Juice of 1/2 a lime

1/2 bunch of Cilantro or 1 TBSP of dried Cilantro

3oz Cotija cheese, crumbled

Step 1: Prepare pasta as directed on box.

Step 2: Meanwhile, brown canned corn in a skillet over medium-high heat.

Step 3: Mix together adobe chili sauce, mayo, cumin, paprika, chili powder, and lime juice. Set aside.

Step 4: Drain pasta, rinse with cold water, return to pot. Add all ingredients and stir well. 

Optional: Add black beans for extra protein!
