Tortellini Soup

…that’s not so bad for you 😉

INGREDIENTS:

1 cup Yellow onion, diced

3 Garlic cloves, minced

2 TBSP Olive oil

28oz Diced tomatoes

15oz Tomato sauce

15oz Canned coconut milk

32oz/4 cups Vegetable broth

1 tsp Oregano, dried

1 tsp Basil, dried

1/2 tsp Parsley, dried

1/2 tsp Thyme, dried

20oz Three cheese tortellini (or whatever pleases you!)

1/2 cup Parmesan cheese, AT LEAST

Salt and Pepper to taste 

INSTRUCTIONS:

Step 1: Sauté onion and garlic in olive oil.

Step 2: Add diced tomatoes, tomato sauce, coconut milk, vegetable broth, and all of the herbs. Simmer for 20 minutes, stirring occasionally. 

Step 3: Add tortellini, stir, let simmer for about 15 minutes or until tender.

Step 4: Stir in parmesan cheese.

Step 5: ENJOY!
