Taquitos two ways!

Since my husband is back stateside, I’m now cooking for both of us which poses new challenges because he eats meat.

For dinner tonight, we made taquitos. His were made with ground turkey and mine with refried beans.

INGREDIENTS:

1/2lb of ground turkey and/or 1/2 can of refried beans

1/2 tsp Taco seasoning

1/2 tsp oil 

2 TBSP yellow onion, chopped

1/4 cup Cotija cheese, grated

6 Corn tortillas

Shredded cheddar cheese for sprinkling on top
INSTRUCTIONS:

Step 1: Preheat oven to 450°F 

Step 2: Sauté onions in oil until translucent.

Step 3: Add ground turkey and brown. Then add taco seasoning and stir until well mixed. OR transfer sautéed onions to a bowl and mix together refried beans and taco seasoning.

Step 4: Heat corn tortillas in microwave for 30 seconds. Add about 1 TBSP of either mixture to the tortilla and top with cotija cheese, tightly roll and place on foil lined cookie sheet. Repeat for all 6 tortillas. Top with shredded cheddar cheese if desired.

Step 5: Bake for 10 minutes. Boom. Done. Now, sit back, relax, and enjoy.
