Avocado kale pesto


2-4 cloves of garlic, roughly chopped

2 cups Kale

1 Hass avocado

2 tsp Lime or lemon juice

1/4 cup + 1 TBSP Olive oil

1/2 cup Parmesan cheese

1/2 tsp Onion powder

1/4 tsp Red pepper flakes

1/4 cup Pasta water

Salt & pepper to taste


Step 1: Cook 3 cups of pasta according to directions on box. Set aside 1/4 pasta water.

Step 2: While pasta cooks, sauté garlic in a tablespoon of olive oil until fragrant. Add kale and cook until it whilts.

Step 3: Add all ingredients to blender and blend to desired smoothness. Enjoy! 
I sprinkled a little extra parmesan cheese on top too!
