EASY butternut squash pasta sauce


1 Medium-large butternut squash, cubed

3-4 Garlic cloves, loosely minced

1 cup Vegetable broth

1 cup Alternative milk (I prefer coconut milk)

1 cup Parmesan cheese

2 tsp Paprika

Salt & pepper to taste


Preheat oven to 400

Step 1: Put butternut squash and garlic on coated (Pam, coconut oil, whatever pleases you) baking pan and top with paprika. Cook for 25-35 minutes, or until a fork easily goes through the butternut squash.

Step 2: Put all ingredients into a blender and mix until smooth.

Step 3: Taste the mixture and add salt and pepper as desired. Boom. That’s it. You’re done!
